An Artisan Goat’s Cheese; Mildly Smokey

The story – Wistin, a Gozitan farmer from Xewkija, who lived in the early years of the last century, had the largest goat’s herd on the island. Brigantinu was the nickname of his favourite goat – the naughtiest of the flock and which was forever being chased by Wistin! This cheese is named after this pet goat, in memory of Gozo’s most dedicated herdsman! The cheese-making method used for this artisan specialty is Tan-Nar, which for centuries was practiced by master cheese-makersin their Imhazen tan-Nar, workshops located in various rural villages in Malta & Gozo. _ese craft workshops were equipped with sizeable vats and stoves where the curd was heated on an open fire to set temperatures, following precise, age-tested recipes and processes. All this was being carried out when cooking in households was still done over stone stoves fuelled with dried shrubbery and wood!

Brigantinu is a semi-hard cheese that is made primarily from goat’s milk and is aged for a minimum of 16 weeks. The texture of this cheese is hard enough to slice or dice and has a distinctive taste that is pleasant on the palate. It has an edible, brownish-yellow rind and a straw white hue inside. The end result of this artisan Maltese cheese is to create a symphony of earthy flavours combined with a mild smokey aroma; making it a great match with sherry or vermouth and served with almonds, walnuts and pears.
