Description

Caponata is a traditional Mediterranean relish prepared in season from choice aubergines, celery and peppers which are shallow fried in sunflower oil. This vegetarian delicacy is then blended into a rich tomato sauce with onions, olives and capers to create a full flavoured ratatouille. Mayor Caponata may be served at room temperature as an antipasto or used warm as a topping for pizza, pasta and toasted bread.
