The Drunken Cheese From Malta
This artisan cheese is aptly named Is-Sakranazz – Maltese word meaning drunkard. For weeks this cheese is soaked in grape must during the harvesting of the red varieties of Maltese grapes, at the start of the wine making season. In Malta this usually takes place during the hot summer months of August and September. The cheese used for this specialty is Tan-Nar – an artisan Maltese cheese which for centuries was produced in various rural villages in Malta and Gozo and crafted by master cheese makers in their Imhazen tan-Nar; workshops equipped with vats and stoves where the curd was heated to pre-set temperatures, following age-tested recipes and methods. The end result of this  combination of Maltese artisan cheese and grape must is a symphony of complex flavours with a unique delicate aroma; making this specialty one of a kind!
